Gnocchi
Ingredients
- 6 large potatoes, hot and cooked
- 4 tbsp butter
- 3 eggs, slightly beaten
- 2 tsp baking powder
- 4 cup flour
- ½ cube melted butter
- ½ cup grated Parmesan cheese
- salt and pepper to taste
Method
- Mash the potatoes. Beat in the butter, eggs and baking powder. Salt and pepper to taste. Sift in the flour, making a stiff dough. Mix and knead until the dough is smooth.
- Shape the dough into long rolls about as thick as a finger and cut into 1-inch pieces. Press each piece with your thumb to make a crescent shape.
- Cook the gnocchi a few at a time in a large pot of boiling salted water until they rise to the surface, about 10 minutes.
- Arrange in a heated baking dish and sprinkle with melted butter and cheese. Set the dish in a 350 degree oven a few minutes until the cheese melts.
Notes
Serve with a roast and stuffed zucchini. Also good served with spaghetti sauce. Serves 8. From Rosauers (Vegetables VG-43).
