Ingredients

  • ¾ cup water
  • ⅓ cup soy sauce
  • 2 tsp salt
  • 2¼ lb pork, cut into 2-inch strips
  • 2 can 1 lb 4 oz each pineapple chunks
  • ¼ cup firmly packed brown sugar
  • ⅓ cup cornstarch
  • ¼ cup vinegar
  • 2 medium onions, thinly sliced
  • 2 large green peppers, cut into strips
  • 5 cup cooked rice

Method

  1. Bring the water, soy sauce and salt to a boil over medium heat; reduce to a simmer. Add the pork; cover; simmer 1 hour or until tender.
  2. Drain the pineapple; reserve 2 1/2 cups syrup. Combine the syrup, sugar, cornstarch and vinegar; add to the pork. Cook, stirring constantly, until thickened.
  3. Add the pineapple and onion; simmer 10 minutes. Add the green pepper; simmer 5 minutes. Serve with rice.
  4. For a glamorous touch, garnish with pineapple tops or fresh nasturtium leaves and flowers.
