Ingredients

  • 1 9-inch baked shell
  • 3 oz cream cheese
  • 3 tbsp dairy sour cream
  • 5 cup 4 to 6 cups fresh strawberries
  • 1 cup sugar
  • 3 tbsp cornstarch
  • whipped cream, if desired

Method

  1. Beat the softened cream cheese till fluffy. Add the sour cream and continue beating till smooth. Spread on the bottom of the shell; refrigerate.
  2. Wash and hull the strawberries. Mash enough of the lesser berries to make 1 cup. Force through a sieve; sieve more fruit if necessary to make 1 cup.
  3. Combine the sugar and cornstarch. Add 1/3 cup water and the sieved berries. Cook over medium heat, stirring, till the mixture is clear and thickened. Add a little red food coloring if desired.
  4. Fill the shell with the remaining whole strawberries, tips up. Pour the cooked, slightly cooled mixture over the top. Chill 1 hour. Serve with whipped cream.
