Ingredients

  • 3 large green peppers
  • ¼ cup raisins
  • 1 lb ground pork
  • ½ cup chopped onion
  • ½ cup chopped carrot
  • ½ cup chopped celery
  • ¼ tsp salt
  • 1 cup cooked brown rice
  • 2 tbsp sunflower seeds
  • ½ cup plain yogurt
  • ½ cup optional seasoned fine dry bread crumbs
  • 1 tbsp optional melted butter

Method

  1. Remove the tops, seed and membranes from the peppers. Cut in half lengthwise. Cook in boiling salted water for 5 minutes; drain. Soak the raisins in water for 10 to 15 minutes. Drain and set aside.
  2. In a skillet, combine the pork, onion, carrot, celery and salt. Cook slowly until the pork is done and the vegetables are tender. Drain thoroughly. Add the rice, sunflower seeds, yogurt and raisins. Mix well.
  3. Heap the mixture into the peppers. Place in a 12x8-inch baking dish. If desired, combine the crumbs and melted butter; sprinkle over the filling. Bake at 350 degrees for 30 to 35 minutes or until heated through and the crumbs are browned.

Yield: 6 servings.
