Bacon-Cheese Squares
Ingredients
- ½ lb bacon, cut-up
- ½ cup minced onion
- 3 green onions with tops, chopped
- 8 eggs
- ¼ cup milk
- 1⅓ cup unsifted flour
- 1 tsp salt
- 1 tsp baking powder
- 4 cup 1 pound cubed Monterey Jack cheese
Method
- Cook the bacon until limp; add the onions and cook until tender.
- Beat the eggs until light and lemon colored; add the milk. Combine the flour, salt and baking powder; stir into the egg mixture. Add the bacon, onions and bacon fat; mix well. Stir in the cheese.
- Turn into an ungreased 9x9-inch baking dish. Bake at 350 degrees for 30 minutes or until done. Serve cut in squares.
Notes
From Peggy Hollinsworth. To accompany, serve spears of fresh asparagus topped with lemon butter, a fresh fruit platter and an assortment of Danish rolls. Yield: 9 servings.
