Burnt Cream
Ingredients
- 1 pint whipping cream
- 4 egg yolks
- ½ cup granulated sugar
- 1 tbsp vanilla
- 4 tbsp sugar topping granulated sugar
- 1 tsp sugar topping brown sugar
Method
- Preheat the oven to 350 degrees. In a saucepan, heat the cream over low heat until bubbles form around the edge of the pan. Beat the egg yolks and sugar together until thick, about 3 minutes. Gradually beat into the warm cream.
- Stir in the vanilla and pour into 6 (6-ounce) custard cups. Place the cups in a baking pan with about 1/2 inch water in the bottom. Bake until set, about 45 minutes.
- Remove the custard cups from the water and refrigerate until well chilled. Combine the topping ingredients. Sprinkle each custard with about 2 teaspoons of the sugar blend. Place on the top rack under the broiler and cook until the topping is medium brown. Chill before serving.
