Chicken and Peanuts
Ingredients
- 1½ tsp cornstarch
- 2 tbsp soy sauce
- ⅓ cup chicken broth
- 1 tsp sugar
- ½ tsp 1/4 to 1/2 tsp crushed red pepper
- 2 tbsp vegetable oil
- 1½ lb chicken breasts, skinned, boned and cut into bite-sized pieces
- ¾ tsp minced ginger root
- 1 green pepper, cut into 1-inch pieces
- 4 scallions, diagonally sliced into 1-inch pieces
- ⅔ cup dry roasted, unsalted peanuts
Method
- Dissolve the cornstarch in the soy sauce. Mix together the chicken broth, sugar, red pepper and soy sauce mixture. Set aside.
- Preheat the oil in a wok or large skillet. Add the chicken breasts and ginger, stir-fry until the meat loses its pinkness. Remove the meat from the wok.
- Add the green peppers and onions to the wok and stir-fry 2 minutes. Add the peanuts. Stir-fry 1 more minute. Return the meat to the wok. Add the chicken broth mixture. Stir-fry until the mixture boils and thickens, about 1 minute. Serve with rice, if you like. Makes 4 servings.
Notes
Chicken is the favorite main dish for the majority of Americans. It's inexpensive and has fewer calories than fat-marbled beef.
