Chicken Breasts in Parsley Butter
Ingredients
- 2 chicken breasts, boned
- ¼ cup below parsley butter
- 2 eggs, beaten
- ½ cup bread crumbs
- ½ cup flour
- 4 tbsp parsley butter softened butter
- 1 tbsp parsley butter chopped parsley
- ¼ tsp parsley butter cayenne pepper
- 1 tbsp parsley butter lemon juice
- ½ clove parsley butter garlic, minced
Method
- Flatten each breast with a rolling pin to 1/8 inch. Place half of the parsley butter on each breast, fold in the ends and roll up, sealing with beaten egg. Flour each breast, dip in egg, then in bread crumbs.
- Place in hot oil and deep fry until golden brown, about 6 minutes at 325 degrees. Drain and serve.
- Parsley Butter: Combine 4 tablespoons softened butter, 1 tablespoon chopped parsley, 1/4 teaspoon cayenne pepper, 1 tablespoon lemon juice and 1/2 clove garlic, minced.
