Chicken Parmesan
Ingredients
- 2 1-1 1/4 lb boneless chicken breasts, split and pounded thin, skinned
- ¾ cup Italian seasoned dry bread crumbs
- ¼ cup grated Parmesan cheese
- ¼ tsp paprika
- 1 egg, beaten with 1/4 cup water
- 2 tbsp oil
- 1 can 8 oz tomato sauce or Prego spaghetti sauce (mushroom)
- oregano
- 1 cup shredded mozzarella cheese
Method
- Coat the bottom of an oblong baking dish with 1 tablespoon oil. Dip the chicken in the crumbs mixed with the Parmesan cheese and paprika, then dip in the egg mixture, again in the crumbs. Place the chicken in the dish, sprinkle on the remaining 1 tablespoon oil.
- Heat 2-2 1/2 minutes on high power. Turn the chicken over and heat an additional 2-2 1/2 minutes. Top with the tomato sauce and oregano. Heat 3 1/2-4 1/2 minutes or until the sauce is hot. Sprinkle with the mozzarella. Let stand, covered, 5 minutes or until the cheese is melted.
- Note: For the last heating time, using a conventional oven makes it thicken better.
