Ingredients

  • 6 egg yolks
  • 3 tbsp sugar
  • ½ cup sweet Marsala wine or sweet sherry
  • 1 cup cold heavy cream
  • 1 pint optional fresh raspberries or blueberries

Method

  1. Whisk the egg yolks and sugar together in the top of a double boiler set over simmering water. Continue to whisk gently until the mixture is tepid, then add the Marsala and begin whisking vigorously until the mixture is thick and foamy, 5 to 6 minutes total.
  2. Whip the cream until soft peaks form. Gently fold the whipped cream into the warm zabaglione until blended. Place in a serving dish. Cover and refrigerate until chilled, about 2 hours. Serve with fresh berries, if desired.

Notes

Tart berries make an excellent counterpoint to this rich dessert. Preparation and cooking time: 20 minutes. Chilling time: 2 hours. Serves 4 to 6. From "365 Easy Italian Recipes" by Rick Marzullo O'Connell (HarperCollins, 1991).
