  • 1 cup all-purpose flour
  • ¾ cup cornmeal
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ¾ tsp salt
  • 2 beaten eggs
  • 1 cup milk
  • ¼ cup melted shortening or cooking oil

Method

  1. Preheat oven to 400 degrees. In a medium mixing bowl, stir together the flour, cornmeal, sugar, baking powder and salt.
  2. In another bowl, combine the eggs, milk and melted shortening or cooking oil. Add the egg mixture all at once to the dry ingredients. Stir just until moistened.
  3. If using a cast-iron skillet, place a greased 10-inch cast-iron skillet in the oven for 3 minutes; remove and pour the batter into the hot skillet. (Or pour the batter into an unheated, greased 9-inch round baking pan.)
  4. Bake about 20 minutes or until light brown.

Notes

A cast-iron skillet gives the cornbread a crisp, golden crust, but a round cake pan works well too. Prep 12 minutes, bake 20 minutes. Makes 8 to 10 servings.
