Company Cornbread
Ingredients
- 1 cup all-purpose flour
- ¾ cup cornmeal
- 2 tbsp sugar
- 1 tbsp baking powder
- ¾ tsp salt
- 2 beaten eggs
- 1 cup milk
- ¼ cup melted shortening or cooking oil
Method
- Preheat oven to 400 degrees. In a medium mixing bowl, stir together the flour, cornmeal, sugar, baking powder and salt.
- In another bowl, combine the eggs, milk and melted shortening or cooking oil. Add the egg mixture all at once to the dry ingredients. Stir just until moistened.
- If using a cast-iron skillet, place a greased 10-inch cast-iron skillet in the oven for 3 minutes; remove and pour the batter into the hot skillet. (Or pour the batter into an unheated, greased 9-inch round baking pan.)
- Bake about 20 minutes or until light brown.
Notes
A cast-iron skillet gives the cornbread a crisp, golden crust, but a round cake pan works well too. Prep 12 minutes, bake 20 minutes. Makes 8 to 10 servings.
