Doughnuts (from Basic Sweet Dough)

Ingredients
- 2 pkg yeast
- ¼ cup lukewarm water
- 1 cup milk
- ½ cup sugar
- 2 tsp salt
- ¼ cup shortening (Wesson oil)
- 2 eggs
- 5 cup about flour
Method
- Soften the yeast in lukewarm water. Scald the milk; add the sugar, salt and shortening. Cool to lukewarm.
- Add flour to make a thick batter. Mix well. Add the yeast and eggs. Beat well; add enough more flour to make a soft dough.
- Knead until smooth and satiny; let rise until doubled, then shape, fry and finish as doughnuts. (This card is the Basic Sweet Dough base; the doughnut shaping and frying steps are not on the scanned side.)
