Ingredients
- 2 eggs, separated
- ¾ cup sugar, divided
- 2 cup flour
- 1½ tsp baking soda
- ¾ tsp salt
- 1¼ tsp ginger
- 1 tsp cinnamon
- ⅔ cup skim or low-fat milk
- ⅔ cup molasses
- ⅓ cup extra-light olive oil
- grated rind of 1 orange
- 1 cup cream cheese frosting powdered sugar
- 2 oz cream cheese frosting softened light cream cheese
- 2 tbsp cream cheese frosting; 2 or 3 thawed orange juice concentrate

Method
- In a small mixing bowl, beat the egg whites until frothy. Gradually add 1/4 cup of the sugar, beating until the whites hold peaks.
