  • 2 eggs, separated
  • ¾ cup sugar, divided
  • 2 cup flour
  • 1½ tsp baking soda
  • ¾ tsp salt
  • 1¼ tsp ginger
  • 1 tsp cinnamon
  • ⅔ cup skim or low-fat milk
  • ⅔ cup molasses
  • ⅓ cup extra-light olive oil
  • grated rind of 1 orange
  • 1 cup cream cheese frosting powdered sugar
  • 2 oz cream cheese frosting softened light cream cheese
  • 2 tbsp cream cheese frosting; 2 or 3 thawed orange juice concentrate
  • 1 tsp cream cheese frosting lemon juice

Method

  1. In a small mixing bowl, beat the egg whites until frothy. Gradually add 1/4 cup of the sugar, beating until the whites hold peaks.
  2. Combine the flour, soda, salt, 1/2 cup of the sugar, the ginger and cinnamon in a larger mixer bowl; stir to blend. Make a well in the center. Add the milk, molasses, oil, reserved egg yolks and orange rind. Mix until smooth. Gently fold the egg whites into the batter.
  3. Pour into a greased and floured (or paper-lined and buttered) 9-inch square pan. Bake at 350 degrees for 45 to 50 minutes. Serve warm with a lemon or orange sauce, or cool and frost with cream cheese frosting.
  4. Cream Cheese Frosting: Combine 1 cup powdered sugar, 2 ounces softened light cream cheese, 2 or 3 tablespoons thawed orange juice concentrate and 1 teaspoon lemon juice until smooth.

Notes

Yield: 9 to 12 servings.
