To Freeze Strawberries
Ingredients
- firm, ripe, red strawberries with good flavor
- ½ cup dry sugar pack sugar per quart of berries
Method
- Select firm, ripe, red berries with good flavor. Wash the berries, a small amount at a time, in ice water. Drain in a colander, then spread the berries on paper towel-lined jelly-roll pans. Sort and remove the hulls. Freeze according to one of these methods:
- Dry sugar pack (preferred for berries you'll use in salads, in fruit cups or over cereals): Slice the fruit into a shallow dish or bowl. Sift sugar over the berries (1/2 cup sugar for 1 quart strawberries). Fold gently just until the sugar dissolves. Fill containers; label; freeze. Or layer sliced berries and sugar into containers — add sugar lightly at first, then increase it near the top. Shake the container to distribute the sugar. Label and freeze. Note the amount of sugar on the label so you can adjust sweetening when the berries are used.
- Unsweetened (best for berries you'll later cook or sweeten to taste): pack whole or sliced berries into containers without sugar, leaving headspace; seal, label and freeze.
- Syrup pack: pour a cooled sugar syrup over the berries in the container to cover, leaving headspace; seal, label and freeze.
Notes
Freezer preparation guide (not a single dish). Whole, unsweetened berries hold their shape best for garnishes; sugar or syrup packs give better texture and color for eating.
