Ingredients

  • 2 lb ground beef
  • 1 cup chopped onion
  • ½ cup chopped green pepper
  • 2 cloves garlic, finely chopped
  • ¼ cup oil
  • 1 tsp flour
  • 2 tomatoes, chopped
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp dried thyme leaves
  • ¼ cup dry white wine
  • ¼ cup beef broth
  • ¼ lb cured sausage (salami)
  • 1 cup slivered almonds or pine nuts

Method

  1. Stir fry the beef, onion, green pepper and garlic in the oil until the beef is light brown and the onion is tender. Stir the flour into the meat mixture; stir in the tomatoes and seasonings. Cook over medium, stirring occasionally, 5 minutes.
  2. Stir in the wine and broth. Heat to boiling; reduce the heat and cover. Simmer 30 minutes.
  3. Brown the sausage. Drain. Stir the nuts into the meat mixture. Top with the sausage. Cook 15 minutes.

Notes

Make-ahead timesaver. Serves 6-8. Make-ahead: refrigerate before cooking the sausage. To serve, heat to boiling; reduce the heat and proceed with directions as above. From Rosauers (Main Dishes MD-69).
