Pepper Steak Caballero
Ingredients
- 1½ lb sirloin steak, cut in strips 1/8-inch thick
- 1 tbsp paprika
- 2 clove garlic, crushed
- 2 tbsp butter or margarine
- 1 cup sliced green onions with tops
- 2 green peppers, cut in strips
- 2 large fresh tomatoes, diced
- 1 cup beef broth
- ¼ cup water
- 2 tbsp cornstarch
- 2 tbsp soy sauce
- 3 cup hot cooked rice
Method
- Sprinkle the steak with paprika and allow to stand while preparing the other ingredients.
- Cook the steak and garlic in butter until the meat is browned. Add the onions and green peppers; continue cooking until the vegetables are wilted. Add the tomatoes and broth; cover and simmer about 15 minutes.
- Blend the water with the cornstarch and soy sauce. Stir into the steak and cook until thickened. Serve over rice.
Notes
Serve over beds of fluffy rice. Serves 6. From Rosauers (Beef BF-28).
