Pickles And Relishes
Quick or "New" Dill Pickles
Ingredients
- fresh dill weed, chopped
- 2 clove 1 or 2 per jar garlic
- small, firm pickling cucumbers
- 1½ tbsp per 1 quart water pickling salt
- 1 quart brine water
Method
- Place a layer of chopped dill weed, about 1 whole stalk, and 1 or 2 garlic cloves on the bottom of a quart jar. Fill the jar with small, firm pickling cucumbers. Place another layer of dill and garlic on top of the cucumbers.
- Cover completely with a salt brine: 1 1/2 tablespoons pickling salt to 1 quart water.
- Cover the jar with a standard screw-on lid or aluminum foil, and store in a cool place. The pickles will be ready in 5 days.
- Discard the top layer of dill before serving and refrigerate. The recipe can be multiplied for larger containers.
