Raisin-Walnut Loaf
Ingredients
- 1 cup rinse and drain raisins seedless raisins
- 2 cup sifted all-purpose flour
- 1 tsp salt
- 1 tsp soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ cup chopped walnuts
- 1 egg
- 1 cup sour milk or buttermilk
- 3 tbsp melted shortening
Method
- Sift together the flour, salt, soda, baking powder and cinnamon. Stir in the raisins and nuts.
- Beat the egg lightly and mix with the sour milk and shortening. Stir into the dry ingredients, mixing only until all of the flour is moistened.
- Turn into a greased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches. Bake in a moderate oven, 350 degrees F, about 1 hour.
- Allow to cool five to 10 minutes. Turn out onto a wire rack to cool.
Notes
Yield: one loaf.
