  • 2 tbsp sugar
  • 1 tsp salt
  • 1 pkg active dry yeast
  • 3½ cup about; divided flour
  • 1 cup water
  • 1 tbsp margarine
  • 1 egg yolk
  • 4 tsp water
  • 1 tsp milk
  • coarse salt

Method

  1. Combine the sugar, salt, yeast and 1 cup flour in a large mixer bowl.
  2. Heat 1 cup water and the margarine to 120 to 130 degrees. With an electric mixer on low speed, gradually mix the hot liquid into the yeast mixture. Beat at medium speed for 2 minutes. Add 1/2 cup flour. Beat at high speed for 2 minutes.
  3. Stir in enough remaining flour to make a soft dough. Knead on a floured surface for 2 to 5 minutes. Place in a greased bowl, turning to grease the surface. Let rise, covered, in a warm place for 40 minutes.
  4. Divide into 12 portions. Roll each into a 20-inch rope. Shape into pretzels; place on a greased baking sheet. Beat the egg yolk with the water and milk. Brush over the pretzels; sprinkle with coarse salt.
  5. Bake at 350 degrees for 15 minutes or until brown. Cool on a wire rack.

Notes

Yield: 12 pretzels.
