Sesame Sweet 'n Sour Chicken
Ingredients
- 1 can 1-lb 4-oz chunk pineapple
- 3 lb frying chicken, cut-up
- 2 tbsp butter
- ¼ cup apricot preserves
- ¼ cup catsup
- 3 tbsp soy sauce
- 2 tbsp red wine vinegar
- 1 tbsp oil
- ¼ tsp garlic salt
- ¼ tsp ginger
- 2 tsp cornstarch
- 1 green pepper, chunked
- 1 cup halved cherry tomatoes
Method
- Drain the pineapple, reserving the juice. Brown the chicken in butter. Remove the chicken.
- Combine the preserves, 1/2 cup reserved pineapple juice, catsup, soy sauce, vinegar, oil, garlic salt and ginger in the skillet and cook 5 minutes. Add the chicken, cover and simmer 30 minutes. Remove the chicken.
- Combine the cornstarch with the remaining pineapple juice; add to the pan juices and cook, stirring, until thickened. Add the pineapple, pepper and tomatoes. Cook until crisp-tender. Spoon over the chicken.
Notes
Top with toasted sesame seeds. Serves 6. From Rosauers (Poultry PL-35).
