Ingredients

  • ½ cup coarsely chopped pecans
  • 1 cup flour
  • ⅓ cup brown sugar
  • ½ cup butter, melted
  • 4 egg whites
  • ½ cup sugar
  • 2 pkg 10-oz each frozen halved strawberries, completely thawed
  • 3 tbsp lemon juice
  • 3 tbsp optional orange-flavored liqueur
  • 1 carton 12-oz frozen whipped topping

Method

  1. Mix the flour, sugar, nuts and butter. Spread in a 9x13-inch pan. Bake at 350 for 20 minutes, stirring often. Remove from the oven and cool. Remove 1/3 of the crumbs for topping. Spread the remaining crumbs in the bottom of the pan.
  2. Beat the egg whites till peaks form, slowly add the sugar and beat 5 minutes more. Fold in the lemon juice, liqueur and undrained strawberries. Mix thoroughly. Fold in the whipped topping.
  3. Spread the strawberry mixture over the crumbs in the pan. Sprinkle the remaining crumbs on top. Cover and freeze 6 hours or more. Remove and let stand at room temperature approximately 20 minutes before cutting into squares.

Very Excellent. Serves 12-16. From Laurelyn Hansch. * If substituting fresh strawberries, use 1-quart sliced and slightly mashed strawberries plus 1/2 cup sugar; let stand at room temperature 20 minutes.
