Strawberry Royale
Ingredients
- ½ cup coarsely chopped pecans
- 1 cup flour
- ⅓ cup brown sugar
- ½ cup butter, melted
- 4 egg whites
- ½ cup sugar
- 2 pkg 10-oz each frozen halved strawberries, completely thawed
- 3 tbsp lemon juice
- 3 tbsp optional orange-flavored liqueur
- 1 carton 12-oz frozen whipped topping
Method
- Mix the flour, sugar, nuts and butter. Spread in a 9x13-inch pan. Bake at 350 for 20 minutes, stirring often. Remove from the oven and cool. Remove 1/3 of the crumbs for topping. Spread the remaining crumbs in the bottom of the pan.
- Beat the egg whites till peaks form, slowly add the sugar and beat 5 minutes more. Fold in the lemon juice, liqueur and undrained strawberries. Mix thoroughly. Fold in the whipped topping.
- Spread the strawberry mixture over the crumbs in the pan. Sprinkle the remaining crumbs on top. Cover and freeze 6 hours or more. Remove and let stand at room temperature approximately 20 minutes before cutting into squares.

Very Excellent. Serves 12-16. From Laurelyn Hansch. * If substituting fresh strawberries, use 1-quart sliced and slightly mashed strawberries plus 1/2 cup sugar; let stand at room temperature 20 minutes.
