Tequila Beef Steaks
Ingredients
- 4 8 to 10 oz each, cut 1 to 1 1/2 in thick New York strip steaks, trimmed of fat
- ½ cup tequila
- 2 tbsp olive oil
- 1 tbsp pepper
- 2 tsp grated lemon peel
- 1 clove garlic, pressed or minced
- salt, to taste
Method
- Wipe the steaks with a damp paper towel. Put the meat in a 1-gallon plastic food bag. Add the tequila, oil, pepper, lemon peel and garlic. Seal the bag and turn to mix the seasonings. Set the bag in a bowl. Chill at least 1 hour or up to 1 day, turning the bag over occasionally.
- Drain the steaks and place on a grill 4 to 6 inches above a solid bed of hot coals (hot enough so you can hold your hand at grill level only 2 to 3 seconds); or, set a gas barbecue to this heat.
- Turn the steaks over to brown evenly. For medium rare, cook 12 to 14 minutes. Transfer the meat to plates and season to taste with salt.
Notes
Preparation time: about 5 minutes. Marinating time: at least 1 hour. Cooking time: 10 to 18 minutes. Serves 4.
