Ingredients

  • 4 8 to 10 oz each, cut 1 to 1 1/2 in thick New York strip steaks, trimmed of fat
  • ½ cup tequila
  • 2 tbsp olive oil
  • 1 tbsp pepper
  • 2 tsp grated lemon peel
  • 1 clove garlic, pressed or minced
  • salt, to taste

Method

  1. Wipe the steaks with a damp paper towel. Put the meat in a 1-gallon plastic food bag. Add the tequila, oil, pepper, lemon peel and garlic. Seal the bag and turn to mix the seasonings. Set the bag in a bowl. Chill at least 1 hour or up to 1 day, turning the bag over occasionally.
  2. Drain the steaks and place on a grill 4 to 6 inches above a solid bed of hot coals (hot enough so you can hold your hand at grill level only 2 to 3 seconds); or, set a gas barbecue to this heat.
  3. Turn the steaks over to brown evenly. For medium rare, cook 12 to 14 minutes. Transfer the meat to plates and season to taste with salt.

Notes

Preparation time: about 5 minutes. Marinating time: at least 1 hour. Cooking time: 10 to 18 minutes. Serves 4.
