Turkey and Artichoke Bake (with Lamb & Green Bean Stew and Ham Carbonara)

Method
- TURKEY AND ARTICHOKE BAKE — Ingredients: 2 (9-oz) packages frozen artichoke hearts, cooked; 1/2 cup butter or margarine; 1 1/2 cups chicken broth; 1/2 cup flour; 1 1/2 cups shredded Swiss or Gruyere cheese; 1/4 teaspoon salt; 1/4 teaspoon white pepper; 2 cups cooked turkey, cubed. Melt the butter; blend in the flour. Gradually stir in the chicken broth. Cook, stirring constantly, until thickened. Add the cheese and seasonings; cook until the cheese is melted. Place the artichoke hearts, turkey and cheese sauce into a 2-quart casserole. Bake in a 350 F oven for 25 minutes. Makes 4 to 6 servings.
- LAMB AND GREEN BEAN STEW — Ingredients: 1 1/2 lbs lamb, cut into 1-inch cubes; 2 tablespoons butter or margarine; 2 medium onions, cut into thin wedges; 1 teaspoon salt; 1/2 teaspoon pepper; 1/4 teaspoon cinnamon; 1/8 teaspoon allspice (optional); 1 1/2 lbs fresh whole green beans (or halved, if desired); 2 cups water. String and cut the green beans, wash and drain. Brown the lamb in butter; add the onions and saute until yellow and soft. Add the seasonings. Combine the beans with the meat and onions. Cover, reduce heat and simmer for 15 minutes. Add the water and cook over low heat approximately 45 minutes to 1 hour or until the meat is tender. Turn into a vegetable dish or casserole and serve over rice. Makes 6 servings.
- HAM CARBONARA — Ingredients: 2 whole eggs; 2 egg yolks; 1 cup grated Parmesan cheese; 1 lb spaghetti (linguine); 6 tablespoons softened butter; 2 cups cooked ham, cubed or cut into julienne strips; 1/2 cup heavy cream. Beat the eggs and yolks until well blended; add 1/2 cup cheese. Cook the spaghetti; drain. In 2 tablespoons butter, saute the ham until lightly browned; remove the ham and add the cream. Bring the cream to a simmer and keep warm while the spaghetti cooks. Turn the cooked and drained spaghetti into a warmed serving bowl; add the remaining soft butter. Turn the spaghetti with two forks to coat well. Add the ham, hot cream, beaten eggs and remaining cheese. Mix well. Makes 6 servings.
