Ingredients

  • 6 3/4-inch thick loin pork chops
  • ½ cup raisins
  • 1 onion, sliced
  • 3 red apples, cored and cut in sixths
  • 1 tbsp brown sugar
  • ¾ tsp salt
  • dash pepper
  • ¼ tsp nutmeg
  • ½ tsp basil
  • dash cloves
  • 1 cup apple juice
  • 2 tbsp red currant jelly

Method

  1. Brown the pork chops on both sides and place in a 2-quart baking dish. Soak the raisins in boiling water to cover until plumped; drain.
  2. Cover the chops with onion slices. Arrange the apples on top of the onions; top with the raisins. Combine the brown sugar, salt, pepper, nutmeg, basil and cloves. Sprinkle over the raisins. Pour the apple juice over the top.
  3. Cover and bake 1 hour. Remove the cover and bake 1 more hour.
  4. Arrange the chops on a heated serving platter. Stir the jelly into the pan drippings and mix well. Pour over the chops.
