Apple Crowned Pork Chops
Ingredients
- 6 3/4-inch thick loin pork chops
- ½ cup raisins
- 1 onion, sliced
- 3 red apples, cored and cut in sixths
- 1 tbsp brown sugar
- ¾ tsp salt
- dash pepper
- ¼ tsp nutmeg
- ½ tsp basil
- dash cloves
- 1 cup apple juice
- 2 tbsp red currant jelly
Method
- Brown the pork chops on both sides and place in a 2-quart baking dish. Soak the raisins in boiling water to cover until plumped; drain.
- Cover the chops with onion slices. Arrange the apples on top of the onions; top with the raisins. Combine the brown sugar, salt, pepper, nutmeg, basil and cloves. Sprinkle over the raisins. Pour the apple juice over the top.
- Cover and bake 1 hour. Remove the cover and bake 1 more hour.
- Arrange the chops on a heated serving platter. Stir the jelly into the pan drippings and mix well. Pour over the chops.
