Ingredients

  • 3 lb corned beef brisket
  • 2 medium acorn squash, quartered
  • 4 small apples, quartered
  • ½ cup peach preserves
  • ½ tsp ground ginger

Method

  1. Rinse the meat in cold water. Place the meat, fat side up, on a rack in a shallow roasting pan. Add 2 cups water, cover with foil. Bake in a 350 degree oven 2 to 2 1/2 hours. Drain the liquid from the pan; discard.
  2. Place the squash and apple pieces skin side down, around the meat. Add 1/2 cup hot water. Cover; bake 45 minutes.
  3. Mix the preserves and ginger. Spoon over the meat, apples and squash. Bake, uncovered, 10 minutes.

Notes

Serve with squash and apple slices. Serves 6-8. From Rosauers (Beef BF-40).
