Broiled Steak with Parmesan
Ingredients
- 3½ lb sirloin or porterhouse steak
- 2 clove garlic, mashed
- ½ cup olive oil
- 1 cup grated Parmesan cheese
- ½ cup bread crumbs
- 1 tsp salt
- ½ tsp pepper
- ½ tsp dried oregano
- ¼ tsp rosemary
Method
- Place the steak in a shallow dish. Add the garlic to the oil and pour over the steak. Let stand one hour in a cool place, turning the steak several times.
- Make a mixture of the cheese, crumbs, salt, pepper and herbs.
- Lay the drained steak on a preheated broiler pan and broil about five minutes. Quickly spread with half of the cheese mixture. Return to heat. Broil slowly until browned.
- Turn the steak. Pour a little garlic oil over it. Broil five minutes. Spread quickly with the remaining cheese mixture. Broil slowly to desired doneness.
Notes
Serve with green Italian string beans. Serves 4 to 6. Tip: The most accurate test for doneness is to insert a paring knife close to the bone and see how the steak looks. From Rosauers (Beef BF-2).
