Ingredients

  • 4 tbsp flour
  • 3 lb pork loin roast, boned, rolled and tied
  • ½ cup soy sauce
  • ½ cup sherry
  • 1 clove garlic, minced
  • 1 tbsp dry mustard
  • 1 tsp ground ginger
  • 1 tsp thyme
  • 1 cup sauce currant jelly
  • 2 tbsp sauce dry sherry
  • 1 tbsp sauce soy sauce

Method

  1. Shake the meat and flour in a large Brown-In-Bag. Combine the soy sauce, sherry, garlic, mustard, ginger and thyme. Pour in the bag. Marinate 3-5 hours, refrigerated; turn the bag several times.
  2. Make 6 half-inch slits in the top of the bag. Roast at 350 degrees 1 1/2 hours or until a meat thermometer reads 170 degrees.
  3. Sauce: Melt the jelly with the sherry and soy sauce. Stir and simmer 2 minutes.
  4. Microwave: Follow the directions above. Microwave on half power 60 minutes, turning the dish occasionally. Meat thermometer should read 160 degrees. Allow to stand 10 minutes before serving.
