Cheese-Stuffed Meatloaf
Ingredients
- ½ lb mozzarella cheese, not sliced
- 2 lb lean beef, ground
- 2 eggs
- ½ cup packaged seasoned bread crumbs
- 1 cup tomato juice
- ½ tsp salt
- 1 tsp oregano
- few grains pepper
- 2 small onions, minced
- 8 slice boiled ham, paper-thin
Method
- Grate the cheese; set aside. Combine the beef, eggs, bread crumbs, tomato juice, salt, oregano and pepper. Saute the onions in a little vegetable oil until golden brown; add to the meat mixture; mix well.
- Turn out on a sheet of aluminum foil; flatten into an oblong about 1-inch thick. Place the ham slices on the oblong, keeping them about 1 inch from the edge. Sprinkle the grated cheese on the ham. Use the foil to fold the meat mixture over the ham and cheese, closing all openings.
- Turn the loaf from the foil into a greased loaf pan 8 x 5 x 3 inches. Pat with your fingers to fill the corners of the pan and shape the loaf, which will completely fill the pan and be rounded slightly on top.
- Bake at 325 degrees for 60 to 75 minutes, depending on the degree of rareness desired.
