Ingredients

  • 1 lb tenderloin, round, or sirloin beef
  • 1 cup beef broth
  • 1 cup chopped onion
  • 5 cup sliced mushrooms
  • ¼ cup cold water
  • 1 tbsp flour
  • 1 tbsp cornstarch
  • ¼ cup low-fat plain yogurt
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ½ tsp prepared mustard

Method

  1. Broil the steak about 5 minutes on each side. Cut diagonally into thin strips, 2 inches long.
  2. Bring the broth to a boil. Add the onion and mushrooms; cover and simmer 5 minutes. Remove with a slotted spoon; set aside. Simmer the broth until reduced to 1/2 cup; remove from heat.
  3. Combine the water, flour and cornstarch. Stir into the broth. Stir over low until thick, about 2 minutes.
  4. Combine the yogurt, paprika, salt, garlic powder and mustard. Add to the broth, stirring until smooth. Add the beef and mushrooms. Warm over very low heat, stirring constantly until hot.
