Ingredients

  • 1 cup fresh mint leaves, firmly packed
  • ½ cup cider or apple juice
  • 1 cup water
  • 3½ cup sugar
  • 2 to 4 drops green food coloring
  • 1 pouch liquid fruit pectin

Method

  1. Strip the mint leaves from the stems; measure. Place in a large glass, enamel or stainless steel saucepan. Crush the leaves thoroughly with a wooden or plastic masher.
  2. Stir in the cider, water and sugar. Tint as desired with food coloring. Place over high heat; stir until the mixture comes to a boil. Stir in the pectin. Bring to a full rolling boil; boil hard for 1 minute, stirring constantly. Remove from heat.
  3. Immediately pour through a cheesecloth-lined strainer into clean hot jars to within 1/4 inch of the top. Adjust the lids. Process in a boiling water bath for 10 minutes.

Notes

Yield: 3 cups.
