Ingredients

  • 1 quart fresh sweet cherries
  • 2 tbsp lemon juice
  • 4¼ cup sugar
  • 1 box 1 3/4 ounce powdered fruit pectin
  • ¾ cup water

Method

  1. Wash, pit and grind the cherries. Measure 2 cups prepared fruit and place in a large bowl. Stir in the lemon juice. Add the sugar and mix well.
  2. Combine the water and pectin in a saucepan. Bring to a boil and boil 1 minute, stirring constantly. Stir into the fruit mixture and continue stirring 3 minutes. A few sugar crystals will remain.
  3. Quickly ladle into jars and cover at once with tight lids. Keep at room temperature until set, up to 24 hours. Store in the freezer, or for use in 3 weeks, store in the refrigerator.

Yield: 3 pints.
