Apple Squares
Ingredients
- 1 cup sifted all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp ground cinnamon
- ¼ cup 1/2 stick butter or margarine
- ½ cup firmly packed light brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 tsp vanilla
- ½ cup chopped pared cooking apple
- ½ cup finely chopped walnuts
- cinnamon sugar (recipe follows)
Method
- Sift the flour, baking powder, salt and cinnamon onto wax paper.
- Melt the butter in a medium-size saucepan over moderate heat. Remove from the heat. Beat in the sugars, egg and vanilla with a wooden spoon until smooth.
- Stir in the flour mixture, apple and walnuts until thoroughly combined. Spread into a greased 8x8x2-inch pan. Sprinkle with 1 tablespoon of the cinnamon-sugar mixture.
- Bake in a moderate oven (350 degrees) for 30 minutes, or until the top springs back when lightly pressed with a fingertip. Cool completely in the pan on a wire rack. Cut into squares.
- Cinnamon Sugar: Combine 1/2 cup granulated sugar with 1 1/2 teaspoons ground cinnamon in a small jar with a screw-top lid. Cover; shake thoroughly. Store the remainder for future use (for French toast, pancakes, fruit-topped desserts, etc.).
- Variation: Turn these into blueberry squares by substituting fresh or frozen berries for the apple. Bake at 350 degrees for 30 minutes. Makes 16 squares.
