Baked Chicken with Apples
Ingredients
- 2 apples, peeled, cored and sliced
- ¼ cup raisins
- 4 tbsp brown sugar
- ¼ tsp cinnamon
- juice and grated peel of 1/2 lemon
- 2 tbsp butter
- 2½ lb 2-3 lb chicken, split in half
- 1 tsp salt
- ¼ tsp pepper
- ¼ tsp poultry seasoning
- dash cloves
- ¼ cup or use apple juice dry white wine
- juice and grated peel of 1/2 orange
Method
- Line the bottom of a buttered baking dish with apple slices. Sprinkle the raisins, 2 tablespoons sugar, cinnamon, lemon juice and grated peel over the apple slices. Dot with butter.
- Season both sides of the chicken halves with a mixture of the salt, pepper, poultry seasoning and cloves. Place the chicken, skin side up, on top of the apples. Bake uncovered in a 325 degree oven about 2 hours.
- About 45 minutes before the chicken is done, combine the wine, remaining sugar, orange juice and peel in a small saucepan. Bring to a boil, reduce heat and simmer 10 minutes. Pour this mixture over the chicken for a glaze.
Notes
