Ingredients

  • 2 apples, peeled, cored and sliced
  • ¼ cup raisins
  • 4 tbsp brown sugar
  • ¼ tsp cinnamon
  • juice and grated peel of 1/2 lemon
  • 2 tbsp butter
  • 2½ lb 2-3 lb chicken, split in half
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ tsp poultry seasoning
  • dash cloves
  • ¼ cup or use apple juice dry white wine
  • juice and grated peel of 1/2 orange

Method

  1. Line the bottom of a buttered baking dish with apple slices. Sprinkle the raisins, 2 tablespoons sugar, cinnamon, lemon juice and grated peel over the apple slices. Dot with butter.
  2. Season both sides of the chicken halves with a mixture of the salt, pepper, poultry seasoning and cloves. Place the chicken, skin side up, on top of the apples. Bake uncovered in a 325 degree oven about 2 hours.
  3. About 45 minutes before the chicken is done, combine the wine, remaining sugar, orange juice and peel in a small saucepan. Bring to a boil, reduce heat and simmer 10 minutes. Pour this mixture over the chicken for a glaze.

Notes
