Cheese-Crumbed Cornish Hens

Ingredients

  • 2 Rock Cornish Game Hens, split in half lengthwise
  • ¼ cup garlic flavored sour cream dip
  • 1 cup 20 crackers crushed cheese crackers
  • ¼ tsp dried thyme, crushed
  • dash pepper

Method

  1. Wash the hens and pat dry. Coat well with the sour cream dip.
  2. Combine the cracker crumbs, thyme and pepper. Roll the hens in the cracker crumb mixture. Place skin side up in a shallow baking pan.
  3. Bake in a 350 degree oven 45-60 minutes or till done. Garnish with parsley and cherry tomatoes if desired.

Notes

Easy oven make-ahead. Serves 4. From Rosauers (Poultry PL-48).
