Ingredients

  • ½ lb Monterey Jack cheese
  • 3 whole chicken breasts, split and boned
  • 6 piece sliced dried beef
  • 3 slice lean bacon
  • 1 can 10 1/2 oz cream of mushroom soup
  • ¾ cup sour cream
  • ¼ cup tomato paste
  • chopped pimiento
  • minced parsley

Method

  1. Grate 1/2 cup cheese and cut the remaining cheese into 6 sticks about 2 inches long. Place the chicken breasts on the counter skin-side down. Top each with dried beef. Roll the chicken around the cheese and place seam-side down in a 2-quart baking dish. Top each with half a slice of bacon.
  2. Mix the soup with the grated cheese, sour cream and tomato paste. Spread evenly over the chicken rolls. Sprinkle generously with pimiento and parsley.
  3. Bake uncovered in a 350 degree oven 1 hour 15 minutes or until the chicken is tender.

Notes

Serve with noodles or rice and a green salad. Serves 6. From Rosauers (Poultry PL-10).
