Casserole And One Dish Meals

Ingredients

  • 1 lb ground beef
  • 1 can 16 oz whole tomatoes, cut up
  • 1 pkg 1 1/8 oz Durkee Taco Seasoning
  • 1 can 2.8 oz Durkee French Fried Onions
  • 1 carton 12 oz cottage cheese
  • 1½ cup 6 oz shredded Cheddar cheese
  • 2 eggs, slightly beaten
  • 12 6-inch; refrigerated or thawed frozen work fine flour or corn tortillas
  • 1 tomato, chopped
  • shredded lettuce

Method

  1. In a large skillet, brown the beef; drain. Add the canned tomatoes and taco seasoning; simmer, uncovered, 5 minutes. Stir in 1/2 can French Fried Onions.
  2. In a bowl, combine the cottage cheese, 1 cup Cheddar cheese and eggs.
  3. Place 3 tortillas on the bottom of a greased 8 x 12-inch baking dish. Overlap 6 tortillas around the sides of the baking dish. Spoon the meat mixture evenly in the dish. Top with 3 tortillas, then with the cheese mixture.
  4. Bake, covered, at 350 degrees for 45 minutes. Sprinkle with the remaining cheese. Place the remaining onions in the center of the casserole; bake, uncovered, 5 minutes longer.
  5. Before serving, arrange the chopped tomatoes and lettuce around the edge of the casserole.
