Blueberry Whirl
Ingredients
- 10 oz 1 pkg frozen unsweetened blueberries
- ½ cup sugar
- 1 tsp lemon juice
- 2 tbsp water
- 1½ cup prepared biscuit mix
- 4 tbsp butter, melted
- ½ cup milk
- ⅛ tsp nutmeg
Method
- Combine the blueberries and sugar, reserving 2 tablespoons of sugar. Spread 1/3 of the berries in a greased baking dish (about 10x6x2 inches); sprinkle with the lemon juice and water.
- Combine in a 1-quart bowl the biscuit mix, 2 tablespoons of the butter and the milk. Knead lightly about 1/2 minute. Roll or pat the dough into a rectangular shape about 10 1/2 x 6 inches. Brush with the remaining butter and cover with the reserved blueberries. Roll up as for a jelly roll.
- Cut into slices about 1 1/2 inches thick and place cut side up on the blueberry mixture; sprinkle with nutmeg.
- Bake in a hot oven (400 degrees) about 30 minutes. Serve warm with cream if desired.
Notes
To make with canned blueberries, buy a No. 2 can; omit the sugar and water, drain the berries, and spread about 1/3 of them plus all of the syrup in the baking dish, using the remaining berries inside the biscuit roll.
