Ingredients

  • 2 cup all-purpose flour
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, softened
  • ⅓ cup firmly packed dark brown sugar
  • ½ cup maple syrup
  • 2 eggs
  • ½ cup buttermilk
  • 1 cup chopped pecans
  • 3 tbsp Kentucky bourbon

Method

  1. Grease a 9-by-5-by-3-inch loaf pan and line the bottom with wax paper. Stir together the flour, baking powder, soda and salt; set aside.
  2. With an electric mixer, cream the butter and sugar. Add the syrup and eggs; beat on medium speed until light and fluffy.
  3. Add the dry ingredients alternately with the buttermilk, beating well on low speed after each addition. Stir in the pecans and bourbon.
  4. Pour the batter into the prepared pan. Bake in a 350 degree oven for 60 to 65 minutes. Let cool in the pan 10 minutes. Remove the bread from the pan; discard the wax paper. Cool completely before serving.

Notes

Yield: 1 loaf, about 18 servings.
