Caramel Apple Cream Puffs
Ingredients
- 1 pkg 3 3/4-oz vanilla pudding and pie filling mix
- 1 can 3 1/2-oz flaked coconut
- 1 cup chopped apples
- ¼ tsp cinnamon
- 1 tsp sugar
- ½ cup margarine
- 1 cup water
- 1 cup flour
- dash salt
- 4 eggs
- 28 caramel sauce caramels
- ¼ cup caramel sauce water
Method
- Prepare the pudding mix as directed on the package. Add the coconut, apples, cinnamon and sugar. Cover and chill.
- Bring the margarine and water to a boil. Add the flour and salt; stir over low heat until the mixture forms a ball. Add the eggs, one at a time, beating until smooth. Drop rounded tablespoonfuls of batter onto a greased cookie sheet 2 inches apart. Bake at 400 degrees, 30-35 minutes or until golden brown and crusty. Cool. Slit each cream puff; fill each with a rounded teaspoonful of the pudding mixture.
- Caramel Sauce: Melt 28 caramels with 1/4 cup water in a covered double boiler. Stir until smooth. Makes 3/4 cup.
Notes
Serve with caramel sauce. Makes 18 cream puffs. From Rosauers (Desserts DS-50).
