Ingredients

  • 1 pkg 6-oz curried rice mix
  • ¼ cup sliced green onion
  • 3 tbsp butter or margarine
  • 3 tbsp flour
  • 12 slice cooked ham, thin (1/8 - 3/16 inch)
  • 1 tsp curry powder
  • ½ tsp salt
  • 2 cup milk
  • ¼ cup coarsely chopped salted peanuts

Method

  1. Cook the rice as directed on the package label. Cook the green onion in butter till tender. Stir in the flour, curry powder and salt. Add the milk; cook, stirring constantly, until thick and smooth. Stir 1/2 cup of the sauce into the hot cooked rice.
  2. Spoon an equal amount of the rice mixture at one end of each ham slice; roll up. Arrange the rolls in a shallow 2-quart baking dish.
  3. Spoon the remaining sauce over the ham rolls; sprinkle with the peanuts. Heat at 375 degrees 15-20 minutes.
