Ingredients

  • 4 lb pork loin roast
  • 8 oz tomato sauce
  • ½ cup wine vinegar
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp brown sugar
  • 1 tsp cornstarch
  • 1 can sliced pineapple
  • ¼ tsp cinnamon

Method

  1. Trim all the fat from the roast and place bone-side-down in a roasting pan. Cover and roast in a 350 degree oven about 2 hours, until a meat thermometer registers 180 degrees.
  2. A half hour before the roast is done, remove the cover and turn the meat bone side up. Baste with a mixture of the tomato sauce, vinegar, salt, pepper, brown sugar and cornstarch. Repeat basting every 10 minutes, adding water if the sauce is too thick.
  3. When the pork is done place on a platter and decorate with slices of pineapple sprinkled with cinnamon.
