Luau Roast Pork
Ingredients
- 4 lb pork loin roast
- 8 oz tomato sauce
- ½ cup wine vinegar
- 1 tsp salt
- ½ tsp pepper
- 1 tsp brown sugar
- 1 tsp cornstarch
- 1 can sliced pineapple
- ¼ tsp cinnamon
Method
- Trim all the fat from the roast and place bone-side-down in a roasting pan. Cover and roast in a 350 degree oven about 2 hours, until a meat thermometer registers 180 degrees.
- A half hour before the roast is done, remove the cover and turn the meat bone side up. Baste with a mixture of the tomato sauce, vinegar, salt, pepper, brown sugar and cornstarch. Repeat basting every 10 minutes, adding water if the sauce is too thick.
- When the pork is done place on a platter and decorate with slices of pineapple sprinkled with cinnamon.
