Orange Glazed Pork Chops
Ingredients
- 4 double cut loin pork chops
- 2 tbsp chopped onion
- ¼ cup butter or margarine
- ⅓ cup orange juice
- ½ tsp orange rind
- 1 tbsp chopped pecans
- ¼ tsp salt
- 2 cup corn bread stuffing
- 2 cup glaze corn syrup
- ½ tsp glaze orange rind
Method
- Have the butcher make a slit or pocket in the side of each pork chop. Saute the onions in butter until tender. Stir in the orange juice and rind, pecans, salt and stuffing.
- Season the pork chops with salt and pepper and fill the pockets with the stuffing mixture. Skewer closed. Place in a shallow baking pan, cover with foil and bake at 375 degrees F for one hour.
- Uncover, and continue baking 30 minutes, while brushing frequently with the orange glaze. Make the glaze by combining the last two ingredients (corn syrup and orange rind).
Notes
Serve with fresh corn-on-the-cob. Serves 4. From Rosauers (Pork PK-3).
