Layered Mocha Meringues
Ingredients
- 2 egg whites
- pinch of salt
- ½ tsp cream of tartar
- ½ cup brown sugar
- ½ cup sliced almonds
- 1 cup filling whipping cream
- ¼ cup filling brown sugar
- 1 tbsp filling coffee
- 1 tbsp filling hot water
Method
- Beat the egg whites with the salt and cream of tartar until a soft peak holds. Gradually beat in the sugar; fold in the almonds. Cut out 4 brown paper circles 4 inches in diameter. Spread the egg mixture 1/2 inch thick on these circles. Bake on a cookie sheet at 250 degrees for 45 minutes. Let dry in the oven. Peel off the paper.
- Filling: Whip 1 cup whipping cream, gradually adding 1/4 cup brown sugar. Dissolve 1 tablespoon coffee in 1 tablespoon hot water; stir into the whipped cream.
- Layer the meringues with the filling. Chill 2 hours before serving. Garnish with chocolate shavings.
Notes
