  • ¼ cup basic marinade red wine vinegar
  • 2 Tbsp basic marinade vegetable oil
  • 2 Tbsp basic marinade soy sauce
  • 2 Tbsp basic marinade catsup
  • ¼ tsp basic marinade onion salt
  • basic marinade garlic powder and black pepper to taste
  • 1 can 8 oz, tomato-base marinade tomato sauce
  • 2 Tbsp tomato-base marinade lemon juice
  • 1 Tbsp tomato-base marinade vegetable oil
  • 2 tsp tomato-base marinade Worcestershire sauce
  • ¼ tsp tomato-base marinade basil OR oregano
  • ¼ tsp tomato-base marinade onion salt
  • ½ cup oriental marinade soy sauce
  • ¼ cup oriental marinade water
  • 2 Tbsp oriental marinade vinegar
  • 1 Tbsp oriental marinade vegetable oil
  • 1 tsp oriental marinade sugar
  • ¼ tsp oriental marinade ground ginger
  • ½ cup chicken with tarragon and lime lime juice
  • ¼ cup chicken with tarragon and lime vegetable oil
  • 1 tsp chicken with tarragon and lime tarragon
  • 1 tsp chicken with tarragon and lime onion salt
  • ¼ tsp chicken with tarragon and lime black pepper

Method

  1. Basic Marinade: Combine 1/4 cup red wine vinegar, 2 Tbsp vegetable oil, 2 Tbsp soy sauce, 2 Tbsp catsup, 1/4 tsp onion salt, and garlic powder and black pepper to taste. Use with beef, pork or chicken.
  2. Tomato-Base Marinade: Combine one 8-oz can tomato sauce, 2 Tbsp lemon juice, 1 Tbsp vegetable oil, 2 tsp Worcestershire sauce, 1/4 tsp basil OR oregano, 1/4 tsp onion salt, and garlic powder and black pepper to taste. Use with beef, lamb or chicken. Note: the basil is traditional in flavor while the oregano is Italian.
  3. Oriental Marinade: Combine 1/2 cup soy sauce, 1/4 cup water, 2 Tbsp vinegar, 1 Tbsp vegetable oil, 1 tsp sugar, 1/4 tsp ground ginger, and garlic powder to taste. Use with beef, chicken or fish.
  4. Chicken with Tarragon and Lime: Combine 1/2 cup lime juice, 1/4 cup vegetable oil, 1 tsp tarragon, 1 tsp onion salt, and 1/4 tsp black pepper. Brush over two chickens, cut into pieces. Marinate 2 to 3 hours. Try marinating fish for an hour with this recipe.
  5. To marinate, steep the food in the seasoned mixture in a covered container in the refrigerator, turning occasionally. Experiment with the time - enhance rather than disguise the flavor.

Fresh Vegetable Salad (low in calories, makes 10-12 servings): 6 medium tomatoes cut in wedges, 2 cups unpared cucumber sliced, 2 medium onions thinly sliced, 1 cup carrots thinly sliced, 1 cup celery thinly sliced, 1 1/2 cups tarragon vinegar, 1 cup water, 1/2 cup sugar, 2 tsp basil, 1 tsp salt, 1/2 tsp black pepper - place vegetables in the container base, combine other ingredients, pour over, seal and chill at least 4 hours or overnight.
