Peanut Brittle
Ingredients
- 1½ cup sugar
- ⅓ cup water
- ½ cup light corn syrup
- ⅓ cup vinegar
- 2 cup raw peanuts
- 1½ tsp soda
Method
- Combine the sugar, water, syrup and vinegar. Cook over medium heat to hard crack, 300 degrees.
- Add the peanuts. Boil until brown and the peanuts pop or until very brittle in water.
- Remove from the heat; add the soda. Stir well and pour on a buttered slab. When cold, break into pieces.
Notes
Yield: about 2 pounds or 40 pieces. Prep time: about 30 minutes from start to finish. Calories: 80 per piece.
