Ingredients

  • 2 cup sugar
  • ¼ cup water
  • 1½ cup light corn syrup
  • 2 cup salted peanuts
  • 2¼ cup 2 to 2 1/2 cups peanut butter
  • ½ tsp vanilla
  • 1½ tsp baking soda

Method

  1. Grease the cookie sheet(s).
  2. Combine the sugar and water in a heavy saucepan. Bring the mixture to a boil over high heat. Cover and let steam to dissolve the sugar crystals from the sides of the pan. Stir in the corn syrup. Cook to hard crack stage (300 degrees).
  3. Meanwhile, mix the peanuts, peanut butter and vanilla. Remove the syrup from the heat; immediately add the peanut butter mixture. Working quickly, stir in the baking soda, pour the brittle onto greased cookie sheet(s) and spread with a fork.

Notes

Yield: about 3 pounds creamy peanut brittle.
