Ingredients

  • 1½ cup flour
  • 1 tsp salt
  • 1 egg
  • 2 tbsp water
  • ½ lb 1 cup smoked beef, chopped
  • salt and pepper to taste
  • 2 tsp onion, diced
  • 4 cup chicken bouillon
  • ½ cup celery, diced
  • 1 cup fresh spinach

Method

  1. Place the flour and salt in a mixing bowl. Stir together with one slightly beaten egg; add the water. Knead on a floured board until smooth. Cover and let stand 15 minutes. Roll out paper thin and cut into 3-inch squares.
  2. Chop the meat very fine and combine with the seasoning and onion. Place 1 teaspoon of the mixture in the center of each 3-inch square. Fold the squares in half diagonally and press the edges together with a fork. Cook in 1 quart boiling salted water for 15 minutes.
  3. Place the chicken bouillon in a separate saucepan and bring to a boil. Add the celery and cook 5 minutes. Clean and remove the stems from the spinach and add to the mixture. Cook one minute.
  4. Pour over the drained won ton squares in soup bowls. Serve immediately.
