Ingredients

  • 1½ lb pork, diced 1/2-inch thick
  • 2 batter large eggs
  • 4 tsp batter flour
  • 1 tsp batter salt
  • batter; a dash pepper
  • ¾ cup shortening
  • 1 tsp for browning salt
  • 3 large green peppers, sliced in 1/4-inch strips
  • 1 medium onion, sliced
  • 1 cup chicken broth
  • 4 slice pineapple
  • 2½ tsp cornstarch
  • 2 tsp soy sauce
  • ⅓ cup vinegar
  • ½ cup sugar
  • 2 tbsp grated ginger

Method

  1. Make the batter: beat the eggs, add the flour, salt and pepper. Pour the batter over the cubed pork, separating with a fork so that each piece of pork is covered with batter.
  2. Heat 3/4 cup shortening in a heavy skillet, add 1 teaspoon salt, drop the cubes of pork into the skillet, brown, and put aside until needed. Leave 1 teaspoon oil in the skillet.
  3. In the skillet add 1/3 cup of the chicken broth. Cut each pineapple slice into 6 pieces, add to the broth with the green peppers and onion. Cook 5 minutes, then add the pork. Cover the pan tightly and cook for 10 minutes on very low heat.
  4. Blend the cornstarch, soy sauce, vinegar, sugar and 1 teaspoon salt with the rest of the chicken broth; add to the pork mixture, stirring constantly until the juice thickens and the mixture is very hot.
  5. Serve immediately with hot boiled rice.
