Ingredients

  • 1 tbsp plus 1 tsp cornstarch
  • 2 tbsp soy sauce
  • 6 tbsp oil, divided
  • 1 tsp dry sherry
  • ½ tsp sugar
  • ¼ tsp ground ginger
  • 1 lb round steak, cut in thin strips
  • 2 medium green peppers, cut in 1/2-inch strips
  • 2 small onions, cut in wedges
  • 2 small tomatoes, cut in wedges
  • 1 tsp salt
  • hot cooked rice

Method

  1. Combine the cornstarch, soy sauce, 1 tablespoon oil, sherry, sugar and ginger. Add the steak and toss to coat; set aside.
  2. Heat 2 tablespoons oil in a skillet and stir-fry the green peppers and onion until crisp tender, 3-4 minutes. Remove from the skillet; set aside.
  3. Heat the remaining 3 tablespoons oil and stir-fry the steak mixture until well browned. Stir in the green pepper, onion mixture and tomatoes just to heat. Season with salt. Serve over hot rice.
