Main Dish – Chinese Food

Ingredients

  • 1 lb uncooked prawns in shells
  • 3 tbsp vegetable oil
  • ½ tsp salt
  • 1 clove garlic, minced
  • 1 tsp or 1/4 tsp powdered ginger root, minced
  • 2 tbsp sherry
  • 1 tbsp soy sauce
  • 3 green onions and tops, finely chopped

Method

  1. Wash the prawns and pat dry. Cut through the back of the shell to remove the sand vein.
  2. Heat the oil in a wok or frying pan over high heat. Sprinkle with salt. Add the prawns and stir-fry 2 minutes. Add the garlic and ginger and cook 1 minute. Add the sherry and soy sauce; stir 30 seconds. Add the green onions and cook 30 seconds.
  3. Remove from the pan, place in a small baking dish and cover. To reheat, bake in a 400 degree oven 10 minutes.
  4. Dipping Sauce: Mix a little dry mustard with a few drops of water to make a smooth paste; blend in a drop of vegetable oil to make it shiny.

Notes

Cooking in shells seals the juices in. Serves 6. From Rosauers (Seafood SF-44).
