Oriental Style Prawns
Ingredients
- 1 lb uncooked prawns in shells
- 3 tbsp vegetable oil
- ½ tsp salt
- 1 clove garlic, minced
- 1 tsp or 1/4 tsp powdered ginger root, minced
- 2 tbsp sherry
- 1 tbsp soy sauce
- 3 green onions and tops, finely chopped
Method
- Wash the prawns and pat dry. Cut through the back of the shell to remove the sand vein.
- Heat the oil in a wok or frying pan over high heat. Sprinkle with salt. Add the prawns and stir-fry 2 minutes. Add the garlic and ginger and cook 1 minute. Add the sherry and soy sauce; stir 30 seconds. Add the green onions and cook 30 seconds.
- Remove from the pan, place in a small baking dish and cover. To reheat, bake in a 400 degree oven 10 minutes.
- Dipping Sauce: Mix a little dry mustard with a few drops of water to make a smooth paste; blend in a drop of vegetable oil to make it shiny.
Notes
Cooking in shells seals the juices in. Serves 6. From Rosauers (Seafood SF-44).
